Rocco's Tortilla Soup

A cook-as-you-go recipe. Virtually no prep at all.

Now, let's do it!

INGREDIENTS


  • 2 cups Chicken broth
  • 1 can diced fire-roasted tomatoes
  • 1 can chipotle chilis in adobo sauce
  • Fresh salsa
  • 1/2 cup corn
  • 1 cup cooked chicken
  • Salt
  • Pepper
  • 1 avocado
  • Chopped cilantro
  • Tortilla strips

INSTRUCTIONS


  • Combine chicken broth, tomatoes, chilis, salsa and corn in a pot and bring to a boil over medium heat.
  • While simmering, add cooked chicken (I like to use sliced chicken breast or thighs from the frozen section at the supermarket). Season with salt and pepper.
  • Simmer for 15-20 minutes to allow the flavors to mix together and warm the chicken through.
  • Ladle the soup into bowls, topping with the tortilla strips (found in the condiments isle), cilantro and sour cream.
