Turkey Picadillo Tacos

INGREDIENTS


2 lbs ground turkey

2 tbsp olive oil

1.5 cup onion

1 red bell pepper

2 carrots

4 tsp ground cumin

2 tsp ground coriander

1 tsp Kosher salt

1.5 tsp ground pepper

1/4 tsp red pepper flakes

1 tbsp tomato paste (or the whole can as I am wont to do)

28 oz. can diced tomatoes

1 to 2 baking potatoes, cut into small bite-sized pieces

Tortillas, for serving

INSTRUCTIONS


  • Spray a large nonstick pan and brown the turkey over medium high heat. Drain.
  • Heat 1 tbsp of oil, add the onion, garlic, pepper, carrots and saute over medium heat until veggies are tender. Add cumin, coriander, 1 tsp salt, pepper and red pepper. Stir. Add tomato paste and diced tomatoes with their juices. Bring to simmer over medium heat. Return the browned turkey to the pan and simmer together for 15 min.
  • In another skillet over high heat, add the remaining oil, saute potatoes until lightly browned but not cooked through (about 8 minutes). Do in batches - don't overcrowd the pan. Add salt and toss.
  • Stir in the potatoes to the turkey mixture. Serve hot with tortillas and salsa.

I'm in love with this recipe. It's not only a comfort food. It represents a special time in my life when I basically started over. The incredibly filling mixture, combined with tortillas, and served with some extras like my favorite green salsa (Del Primo) and some sour cream just makes this meal sing. I simply love it with my entire being.

One year, instead of Christmas cards, I sent a recipe card with this recipe on it. I love being able to share a part of myself and my kitchen with people. I think it's an extension of the heart that you can send to others for (literal) warm wishes for the season. I think I might do that again this year! -Ryan

My favorite food in the world is Mexican food. I'm not a dessert person. I'm more of a crunchy, salty girl. I could live on chips and salsa. I would take a Mexican meal over some fancy French cuisine anytime.
